The best way to boost the nutrition of a salad is in the dressing!

I'm completely obsessed with that bright, tangy dressing you get at Japanese restaurants. With notes of ginger and sweetness from carrot, I could honestly drink it. So, I made it my mission to recreate it at home.

My version is secretly packed with extra nutrients...I call it my "ultimate hidden veggie" recipe. I blend whole carrots for sweetness, a big knob of fresh ginger for that signature kick, and a bit of onion for a savory, umami depth. It’s that exact same addictive flavor, but made with whole, wholesome ingredients.

If you want to switch things up, make sure to try my Vegan Ranch Dressing, which uses herbs like dill and chives to get that classic ranch flavor. It is perfect for dipping pizza, veggies, or drizzling over a big salad. Now this Cilantro Lime Dressing is my go-to for taco salads and grain bowls. It takes less than 5 minutes to make in a high-speed blender and adds such a beautiful pop of green to your plate.
