Dinner does not have to be complicated! I know we all have those nights where you open the fridge, stare into it for way too long, and end up ordering takeout. But I promise your pantry has a lot more potential than you're giving it credit for. My chili oil peanut noodles have been getting so much love lately and I am not surprised at all. We cook the ramen, mix up the sauce in the same bowl, toss everything together, and it's ready in 10 minutes flat. You can also throw in whatever veggies you have on hand, or add some tofu if you want extra protein. It's hard to mess this one up.
If you're on a noodle kick after this, this Thai Noodle Salad is worth bookmarking. Rice noodles, crunchy veggies, edamame, and a peanut dressing that is so good I've eaten it straight from the bowl with a spoon. It's made with a quick homemade cherry concentrate, combined with calming chamomile tea. We also add two herb tinctures: Ashwagandha is an adaptogen traditionally used to help the body regulate stress by supporting a healthier cortisol rhythm, so instead of carrying the day’s tension into bedtime, it can help signal to the nervous system that it’s safe to downshift. Lemon balm, on the other hand, has a long history of use for easing restlessness and promoting a sense of calm, working gently on neurotransmitters like GABA that are involved in relaxation and sleep quality. When combined with cherry concentrate the result is a well-rounded evening drink that helps ease both mental and physical wind-down.
