Be careful who you make this for. I have baked a lot of vegan pot pies, but this Tuscan Chickpea Pot Pie is officially marriage material. It warms you from the inside out and is hands down the best version I have ever tasted. I am not saying a proposal is guaranteed, but don't be surprised if they start ring shopping the next day. 😉 The flavor here is just ridiculous. Coconut milk makes the filling rich and luscious without any dairy, while the sun-dried tomatoes give it that classic Tuscan vibe. Then we load it up with chickpeas and sweet potatoes to make it more filling. It comes out of the oven bubbling and is honestly the ultimate comfort food for a cold night.
If you want to test the theory on someone else (or just treat yourself), my Marry Me Chickpeas use that same killer combo of coconut milk and sun-dried tomatoes, but it is a quick one-pan meal for busy nights. Or you can go with the Marry Me Pasta, which is the meal my husband actually requests the most. It uses everyday ingredients like garlic and basil for a sauce you will want to eat by the spoonful.
