Be careful who you make this for. I have baked a lot of vegan pot pies, but this Tuscan Chickpea Pot Pie is officially marriage material. It warms you from the inside out and is hands down the best version I have ever tasted. I am not saying a proposal is guaranteed, but don't be surprised if they start ring shopping the next day. 😉 The flavor here is just ridiculous. Coconut milk makes the filling rich and luscious without any dairy, while the sun-dried tomatoes give it that classic Tuscan vibe. Then we load it up with chickpeas and sweet potatoes to make it more filling. It comes out of the oven bubbling and is honestly the ultimate comfort food for a cold night.
If you want to test the theory on someone else (or just treat yourself), my Marry Me Chickpeas use that same killer combo of coconut milk and sun-dried tomatoes, but it is a quick one-pan meal for busy nights. Or you can go with the Marry Me Pasta, which is the meal my husband actually requests the most. It uses everyday ingredients like garlic and basil for a sauce you will want to eat by the spoonful. I hope you enjoy these. Even if you don't get a ring, at least you get to eat pot pie! Sincerely, |

Dinner does not have to be complicated! I know we all have those nights where you open the fridge, stare into it for way too long, and end up ordering takeout. But I promise your pantry has a lot more potential than you're giving it credit for. My chili oil peanut noodles have been getting so much love lately and I am not surprised at all. We cook the ramen, mix up the sauce in the same bowl, toss everything together, and it's ready in 10 minutes flat. You can also throw in whatever veggies...
You know those days where you just want a big hug in a bowl but there isn't enough hours in a day to cook something elaborate... That’s exactly when I pull out my secret weapon: my dumpling bake. Honestly, it is the literal definition of effortless. You just toss everything into one dish, I’m talking frozen dumplings, some ramen nests, and whatever greens you have, like bok choy and broccoli. Let it all bake away in this dreamy, rich coconut curry sauce. It’s so fast to throw together, and...
I am so ready for the seasons to change. Living in Canada means winter feels like it lasts a decade. But we're so close now to having fresh greens that don't cost $10 a bag... I can almost taste it. There's something about knowing that local strawberries are not that far in the future that makes the last stretch of cold weather feel slightly more bearable. Until then, though? I'm still relying on pantry staples like rice and frozen veggies - anything that means I don't have to bundle up and...
